It has to be consistent, both products and table top as well as the connection with the extraordinary design with us. Colors and shapes, but also textures, play a central role. The right plate is carefully selected for each dish; in addition to shape, color and textures, the usability and the sound are important to me.<\/em><\/p>\n<p><strong><u>rochini:<\/u><\/strong><span lang=\"EN-US\">\u00a0<strong>What aspects do you consider when choosing a product that you serve your guests?<\/strong><\/span><\/p>\n<p><em><u>Thomas Bissegger:<\/u><\/em>\u00a0<em>I use the best possible products, ethics and origin are also important points. However, I would like to expand the term seasonality a little and include it in connection with products from all over the world. In addition, different types of preservation give me the opportunity to make products durable, to change their taste and to give them a completely new structure. It is important to keep up with the times and to adapt to new situations and circumstances.
